Evaluation of nutritive and anti-nutritive composition of Talinum triangulare (water leaf) leaves

Abstract
Talinum Triangulare (Water leaf) leaves were analyzed for their nutritive values. The result showed that Talinum Triangulare leaves have moisture content 84.87%, ash content 0.61%, crude fat content 1.56%, crude protein content 3.98%, crude fibre content 7.66%, carbohydrate content 1.77% and available energy 155.47kJ. The mineral content for the analyzed samples showed presence of essential minerals potassium, iron and zinc. The low sodium – to – potassium (Na/k) ratio is an important dietary indicator for the prevention and management of hypertension. The result of the analysis indicates that oxalate, nitrate and cyanide concentrations were below World Health Organization (WHO) recommended limits.
