replacers employed in diverse food products are examined, highlighting their
ability to emulate fat properties while reducing caloric content. The review
delves into the functions and reactions of fats, underscores the necessity for
fat replacers, discusses the different types of fat replacers, and presents
research findings on the application of fat replacers in various food products.
