Acceptability & incorporation of oats in the Indian diet

Abstract
This article is intended to focus on the incorporation of oats in the Indian diets. Oats have a functional nutritional & therapeutic profile. Intake of oats (soluble fibre, beta glucan) helps in the management of diabetes, cardiovascular diseases & weight management. The health benefits may be attributed to it’s physicochemical properties (such as viscosity, molecular weight) which can be affected by extraction methods and its behavior in gastrointestinal tract. Thus it is very important to incorporate oats in the traditional Indian diet & recipes.
